Raúl Dávalos es probablemente uno de los personajes más apasionantes de la viticultura salteña. Su RD ya es vino de culto, manteniendo lThe only oaked wine here is the 2014 Doña Ascensión, an 80/20 blend of Malbec and Cabernet Sauvignon from their estate vineyards where they have kept a clonal selection that is now over 180 years old even if these vines were planted some 15 years ago. It fermented in small stainless steel vats with indigenous yeasts and then matured in well-seasoned, neutral French oak barrels for one year. It's hard to see that the wine is oaked, the barrels are really oxygenating the wine, opening the palate and making the wine more open and a little wider, but not lending any aromas or flavors. Despite being a riper, warmer year, there are no signs of excess ripening, it feels very balanced. It really fills your mouth and seems to saturate every taste bud and hits the sweet spot. Tacuil's wines are getting better and better. 4,000 bottles produced a idea original de no utilizar madera en este corte que logra transmitir en la copa esa hermosa combinación de fruta y especias tan especial de Salta.
